 Creamy Herbed Spinach Dip

From Ellen's 2024 Thanksgiving kitchen, thanks to America's Test Kitchen

Ingredients:
  • 10 oz frozen chopped spinach
  • 1/2 cup sour cream
  • 1/2 cup mayonnaise
  • 3 thinly sliced scallions, whites only
  • 1 tbs fresh dill chopped
  • 1/2 cup Italian parsley, chopped
  • 1 small garlic clove, mashed/chopped
  • 1/4 tsp Tabasco, or equivalent
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1/4 cup finely chopped red bell pepper
Thaw:
  • spinach in microwave on 40 percent power for 3 minutes.  Squeeze well to get rid of all excess water.
In food processor:
  • combine all ingredients, except bell pepper, until smooth and creamy, about 30 seconds.    Transfer to bowl and add bell pepper, covering and chilling until ready to serve.  
Note:  If do an inadequate job of removing water from spinach, mixture makes an excellent salad dressing!
