 Cranberry Sauce with Pears and Fresh Ginger

from Ellen's 2024 Thanksgiving table, thanks to America's Test Kitchen

Ingredients:
  • 3/4 cup water
  • 1 cup granulated sugar
  • 1 tbs grated fresh ginger
  • 1/4 tsp cinnamon
  • 1/4 tsp salt
  • 12  oz cranberries
  • 2 medium pears, firm, peeled, cored, and cut into 1/2 inch chunks
Note:
  • cooking time here is for fresh berries.  If using frozen berries, add 2 minutes to cooking time.
Bring:
  • water, sugar, ginger, cinnamon, and salt to boil in non-corrosive pot over high heat to dissolve sugar.  
Stir:
  •  in cranberries and pears and return to boil.  Reduce to medium and simmer until saucy, slightly thickened, and about 2/3 of berries have ruptured, about 5 minutes.  Transfer to non-reactive bowl, cool to room temperature and serve, or chill.
