 Steamed Broccoli with Spicy Balsamic Dressing and Black Olives

Ingredients:

Broccoli:
  • 1 1/2 lbs pounds broccoli, cut into small florets
  • salt
Dressing:
  • 1/4 cup chopped pitted kalamata olives
  • 1/4 cup olive oil
  • 2 tsp balsamic vinegar
  • 2 tsp red wine vinegar
  • 1 minced garlic clove
  • 1/2 tsp red pepper flakes
  • 1/4 tsp salt
Steam:
  •    broccoli over 1 inch water in Dutch oven.  Cover and cook until tender and bright green, about 5 minutes.
Mix:
  • dressing in large bowl, adding olives at end.  Add broccoli and mix completely.  Serve warm or cold.
