Charred Cabbage with Miso Browned Butter

Ingredients:
- 1 medium regular or savory cabbage
- 1/4 cup olive oil
- 6 tbs unsalted butter
- salt and pepper
- 1 tbs white miso paste
- 1 tbs fresh lemon juice
- 4 scallions, thinly sliced
Cut:
- cabbage in half through the core, then cup each half into 4 wedges, keeping core intact
Heat:
- oil in cast iron skillet or high-sided skillet on medium-high until glistening. Can also brush oil on the cabbage eights and cook on barbeque. Put cabbage cut side down. Press down to encourage browning. Cook about 4 minutes per side, until deeply charred. Add more oil to pan, if needed. When done, transfer wedges to platter.
Wipe:
- pan, and let cook for a few minutes, then add butter. Cook over medium heat, stirring occasionally and scraping bottom of pan, until butter is browned and smells nutty, 3-4 minutes.
Remove:
- pan from heat, add 1 tsp pepper and miso. When combined (won't be smooth), add lemon juice.
Spoon:
- butter sauce over cabbage, top with scallions, and serve. Note, butter sauce good on almost anything!
