Banana Bran Muffins/Bread
from Ellen's kitchen, with thanks to Kelloggs
- 1 cup all-purpose flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1 cup Kellogg's All-Bran Original Cereal
- 1 cup mashed, ripe bananas (2)
- 2 eggs
- 1 tsp vanilla
- 1/4 butter, softened
- 1/2 cup packed brown sugar
- 1/2 cup chopped walnuts (optional)
- 1/2 cup dried fruit (optional)
Preheat:
- oven to 350
Stir:
- flour, baking powder, baking soda, and salt in small bowl. Set aside.
In separate mixing bowl:
- mix together cereal, bananas, eggs, and vanilla. Let stand for about 5 minutes or until cereal softens.
In bowl of stand mixer:
- beat butter and sugar on medium speed until thoroughly combined. Add flour alternately with cereal mixture, mixing well after each addition. Stir in walnuts and dried fruit, if using.
Coat:
- muffin tin or loaf pan with cooking spray and spread evenly.
Bake:
- muffins for about 25 minutes (check with toothpick) or loaf for about 45 minutes (check with toothpick). Remove from pan and cool on wire rack.
