 Banana Bran Muffins/Bread

Ingredients:

  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 cup Kellogg's All-Bran Original Cereal
  • 1 cup mashed, ripe bananas (2)
  • 2 eggs
  • 1 tsp vanilla
  • 1/4 butter, softened
  • 1/2 cup packed brown sugar
  • 1/2 cup chopped walnuts (optional)
  • 1/2 cup dried fruit (optional)
Preheat:
  • oven to 350
Stir:
  • flour, baking powder, baking soda, and salt in small bowl.  Set aside.
In separate mixing bowl:
  • mix together cereal, bananas, eggs, and vanilla.  Let stand for about 5 minutes or until cereal softens.
In bowl of stand mixer:
  • beat butter and sugar on medium speed until thoroughly combined.  Add flour alternately with cereal mixture, mixing well after each addition.  Stir in walnuts and dried fruit, if using.
Coat:
  • muffin tin or loaf pan with cooking spray and spread evenly.
Bake:
  • muffins for about 25 minutes (check with toothpick) or loaf for about 45 minutes (check with toothpick).  Remove from pan and cool on wire rack.
