Dudley's

- 4 cups flour
- 2 tsp cinnamon
- 1 tsp baking powder
- 1 tsp baking soda
- 1 tsp ground ginger
- 1/2 tsp ground nutmeg
- 1/2 tsp kosher salt
- 1/4 tsp ground cloves
- 2 cups packed brown sugar
- 1 cup unsalted butter, room temperature
- 2/3 cup dark molasses
- 2 eggs, room temperature
- 2 cups raisins, or other dried fruit
Preheat:
- oven to 350 degrees. Line a cookie sheet with parchment. Grease with butter and flour both parchment and sides of pan.
In a large bowl:
- combine all dry ingredients, except sugar. Set aside.
In a stand mixer:
- cream butter with paddle, for about 2 minutes.
- Add sugar, and mix until light and creamy, about 2 minutes.
- Mix in eggs, one at a time.
Reduce speed:
- and drizzle in molasses. Mix until thoroughly combined.
With:
- speed at lowest setting, slowly add dry ingredients. Mix until just combined.
Add:
- dried fruit and stir with spatula/spoon until just incorporated.
Use:
- floured fingers and distribute dough evenly across baking sheet.
Bake:
- for 16 minutes, until toothpick comes out clean. Allow to cool completely before cutting.
