 Horneffer Lemon Squares

Ingredients:
  • Crust:
    • 1 cup flour
    • 1/2 cup melted butter
    • 1/4 cup confectioners sugar
  • Filling:
    • 2 eggs
    • 1 cup granulated sugar
    • 2 tbs flour
    • 1/2 tsp baking powder
    • 2 tbs lemon juice
    • 1 tsp grated lemon rind
Mix:
  • flour, butter, and confectioners sugar.  Spread mixture over bottom of a greased 8" square pan.
Bake:
  • at 350 for 20 minutes and remove from oven to cool slightly.
Beat:
  • 2 eggs slightly.  
Sift in a separate bowl:
  • 1 cup granulated sugar
  • 2 tbs flour
  • 1/2 tsp baking powder
Add:
  • dry ingredients to eggs.  Then add lemon juice and rind.  Stir until smooth and pour over crust.
Bake:
  • an additional 25 minutes.
Cool:
  • for 5 minutes and sprinkle with confectioners sugar.  Cool and cut into squares.
