Horneffer Lemon Squares

Ingredients:
- Crust:
- 1 cup flour
- 1/2 cup melted butter
- 1/4 cup confectioners sugar
- Filling:
- 2 eggs
- 1 cup granulated sugar
- 2 tbs flour
- 1/2 tsp baking powder
- 2 tbs lemon juice
- 1 tsp grated lemon rind
Mix:
- flour, butter, and confectioners sugar. Spread mixture over bottom of a greased 8" square pan.
Bake:
- at 350 for 20 minutes and remove from oven to cool slightly.
Beat:
- 2 eggs slightly.
Sift in a separate bowl:
- 1 cup granulated sugar
- 2 tbs flour
- 1/2 tsp baking powder
Add:
- dry ingredients to eggs. Then add lemon juice and rind. Stir until smooth and pour over crust.
Bake:
- an additional 25 minutes.
Cool:
- for 5 minutes and sprinkle with confectioners sugar. Cool and cut into squares.
