Firecracker Salmon

Ingredients:
- Salmon:
- 1.5 lb skinless salmont fillet, cut into 1 1/2" wide strips
- 2-3 tbs canola oil
- chopped chives, for garnish
- Marinade:
- 1/3 cup Sriracha sauce
- 1/2 cup brown sugar
- 3 tbs soy sauce
- 3 garlic cloves, crushed
- 1-2 tsp red pepper flakes
- 1/2-1 tsp salt
- Mix together marinade ingredients and marinate salmon portions in refrigerator 30-60 minutes.
- In large, oven-proof skillet:
- heat oil over medium-high heat. Pan sear salmon on both sides, about 2-3 minutes each side, until crispy. Preheat over to 400. Transfer pan to oven and finish cookinging through, about 5 minutes, to 145 internal temperature. Garnish with chopped chives.
