Chinese Steamed Egg

Ingredients:
- 2 eggs
- 1 cup liquid (water, broth, or mix of both)
- finely diced shitake mushrooms, chives or green onions, soy sauce (optional)
Beat:
- Eggs and liquid together in bowl with fork. Season with a little salt or half tsp fish sauce.
- Top with mushrooms (if desired).
Steam:
- for 12-13 minutes.
Top:
- with drizzle of soy sauce, optional greens.
