Chinese Steamed Egg

Ingredients:
  • 2 eggs
  • 1 cup liquid (water, broth, or mix of both)
  • finely diced shitake mushrooms, chives or green onions, soy sauce (optional)
Beat:
  • Eggs and liquid together in bowl with fork.  Season with a little salt or half tsp fish sauce.  
  •  Top with mushrooms  (if desired).
Steam:
  • for 12-13 minutes.  
Top:
  • with drizzle of soy sauce, optional greens.
