Tabbouleh
Ingredients:
- 1 cup Bob's Red Mill red bulgar
- 1 cup boiling water
- 3 cups chopped fresh parsley
- 1/4 cup finely chopped fresh mint
- 1/4 cup minced scallions
- 2 medium tomatoes, seeded and diced
- 1 medium cucumber, diced
- 1/2 tsp salt
- 1/4 tsp ground cumin
- 1/4 tsp ground black pepper
- 6 tbs lemon juice
- 3 tbs olive oil
Combine:
- bulgar and boiling water and let sit for one hour. Stir. Add all remaining ingredients, mix, and refrigerate for at least one hour.
