Blackened Chicken with Avocado Cream Sauce
Ingredients:
- for chicken:
- 1 tsp cumin
- 1 tsp onion powder
- 1 tsp paprika
- 1 tsp black pepper
- 1/2 tsp kosher salt
- 1/2 tsp cayenne pepper
- 4 boneless, skinless chicken breasts
- 1 1/2 tsp vegetable oil
- for sauce:
- 1 to 1 1/2 avocado, peeled and pitted
- 1/2 cup water
- 1/4 cup nonfat greek yogurt
- 1 1/2 tsp lemon juice
- 1/2 tsp garlic powder
- 1/4 tsp salt
Make Avocado Cream Sauce:
- Blend:
- all sauce ingredients in food processor until smooth. We like the sauce a bit on the thick side, and thus use the larger quantity of avocado.
Make Chicken:
- Stir:
- spices in small bowl.
- Pat:
- chicken dry with paper towels and rub with spice mixture.
- Heat:
- oil in large nonstick skillet with lid over medium-high heat. Add chicken to skillet, cover, reduce heat to medium. Cook 4 minutes. Turn chicken over and continue to cook, covered, 2-4 minutes. Cook until interior temp of chicken is 165.
- Transfer:
- chicken to plate, cover loosely with foil, and let rest 5 minutes.
Serve chicken with sauce.
