Grilled Pork Burgers, horsey sauce, and cheese frisbee
Grilled Pork Burgers

Serves 6
Burger Ingredients:
- 1 slice hearty white sandwich bread, torn into pieces
- 1 shallot, minced
- 2 tablespoons milk
- 4 teaspoons soy sauce
- 1 tablespoon Worcestershire sauce
- 1¼ teaspoons minced fresh thyme
- Salt and pepper
- 1½ pounds 80 percent lean ground pork
- 4 hamburger buns, toasted and buttered
- 1 recipe Horseradish Burger Sauce (optional)
Combine:
- bread, shallot, milk, soy sauce, Worcestershire sauce, thyme, ½ teaspoon salt, and 1 teaspoon pepper in large bowl. Mash together with fork to sticky paste. Add pork and mixed together using hands until well combined.
Divide:
- meat into 4 equal balls. Flatten balls into even ¾-inch-thick patties, about 4 inches in diameter. Press centers of patties down with fingertips until about ½ inch thick, creating slight divot in patties.
For:
- a charcoal grill: Open bottom vent completely. Light large chimney starter filled with charcoal briquettes (6 quarts). When top coals are partially covered with ash, pour evenly over grill. Set cooking grate in place, cover, and open lid vent completely. Heat grill until hot.
- a gas grill: Turn all burners to high and heat grill until hot, about 15 minutes. Turn all burners to medium.
Clean:
- and oil cooking grate. Grill burgers (uncovered for charcoal; covered for gas), until browned on first side, 5 to 7 minutes. Flip and continue grilling until burgers register 150 degrees, 5 to 7 minutes longer. Serve burgers on buns with sauce, if desired.
Horseradish Burger Sauce Ingredients:
- ¼ cup mayonnaise
- 2 tablespoons sour cream
- 1 to 2 tablespoons prepared horseradish
- 1 tablespoon whole-grain mustard
- 1 garlic clove, minced
- Pinch sugar
- Salt and pepper
- Hot sauce
Whisk:
- mayonnaise, sour cream, horseradish, mustard, garlic, and sugar together in bowl. Season with salt, pepper, and hot sauce to taste.
Cheese Frisbee Ingredients:
- 1/2 cup grated sharp cheddar
- 1/4 cup grated parmesan
Combine:
- grated cheeses. Heat griddle at medium-high and place 3 tbs cheese mixture on griddle. Let melt and crisp before flipping. Cook until brown and crispy on both sides. Add to top of burger or serve on size.
