Spiced sweet potato bread
Spiced Sweet Potato Bread

Ingredients:
- 1 1/2 cups all purpose flour
- 1/2 cups whole wheat flour
- 1 tsp baking soda
- 1/2 tsp baking powder
- 1/2 tsp salt
- 1 1/2 tsps cinnamon
- 1 tsp cardamom
- 1/2 tsp nutmeg
- 1/8 tsp cloves
- 2 eggs, lightly beaten
- 1/2 cup brown sugar
- 1/2 cup granulated sugar
- 1/2 cup oil
- 1 tsp vanilla
- 1/3 cup applesauce
- 1/4 cup water
- 2 tbs molasses
- 1 1/2 tightly packed cups of grated sweet potato (about 2 medium sweet potatoes)
- 1/2 cup chopped dried fruits or nuts (optional)
- 1/4 cup turbinado sugar
Preheat:
- oven to 350. Grease one loaf pan and set aside.
Combine:
- dry ingredients (down to cloves) in bowl of stand mixer and mix to combine.
In:
- a separate bowl, mix eggs through molasses. Add sweet potato to wet ingredients and combine with spoon.
Pour:
- wet ingredients into dry and mix until just blended. Add optional nuts or fruits here and stir just a few times.
Pour:
- batter into pan and sprinkle top with sugar. Bake for 50 minutes, or until tester comes out clean. Let cool in pan for 5 minutes, and then turn out onto rack and cool for 1 hour.
Delicious straight out of the oven, toasted, with butter, with ice cream...Yum! :)
