Oatmeal Cookies
Oatmeal Cookies
from Ellen's kitchen, with thanks to Cooks Illustrated
- 1 cup flour
- 3/4 tsp salt
- 1/2 tsp baking soda
- 4 tbs unsalted butter
- 1/4 tsp cinnamon
- 3/4 cup brown sugar
- 1/2 cup granulated sugar
- 1/2 cup vegetable oil
- 1 egg and 1 yolk
- 1 tsp vanilla extract
- 3 cups rolled oats
- 1/2 cup raisins (optional)
Preheat:
- oven to 375. Line two baking sheets with parchment.
Whisk:
- flour, salt, and baking soda together in bowl. Set aside.
Add:
- cinnamon to stand mixer.
Melt:
- butter in small skillet over medium-high heat, swirling occasionally until foaming subsides. Continue to cook, stirring until dark golden brown and nutty aroma. Remove from heat and add butter to cinnamon.
Add:
- sugars, and oil to mixer and combine. Add egg, yolk, and vanilla and mix until smooth. Stir flour mixture in until just combined. Add oats and raisins and stir until combined (mixture will be stiff).
Scoop:
- and place on parchment lined cookie sheets, in size desired with space between cookies for spread. Using wet hand, press cookie balls down.
Bake:
- until edges are set and centers are still soft but not wet, 8-10 minutes. Let cool on sheets for 5 minutes, and then move to cooling rack until completely cool.
