Sweet Potato Stacks

Ingredients:
- 1/8 cup unsalted butter, melted
- about 4 small sweet potatoes, peeled, and cut into 1/4 thick rounds
- cooking spray
- salt
- 1 oz parmesan cheese, grated (about 1/4 cup)
Preheat:
- oven to 375
Melt:
- butter and continue on medium until just starting to brown.
Place:
- slices of potatoes in muffin pan that has been sprayed with cooking spray. Trim potatoes as needed to fit into muffin pan, so that about 4 slices are in each muffin area. Sprinkle with salt and parmesan, and put about 1/2 tsp of butter/garlic onto each stack. Cover pan with foil.
Bake:
- at 375 for 25-30 minutes or until tender. Remove pan from oven, discard foil.
Put:
- boiler on high and put pan under broiler for about 3 minutes or until nicely browned.
