Uncle Phil's Salmon
Modified barely from the kitchen of Susanna and Jimmy Connaughton via Meg's bridal shower cookbook.
This is literally the best salmon recipe EVER! Thanks Banana!
Ingredients:
1/4 cup vegetable oil
1/4 cup white wine (we usually use rice cooking wine)
1/4 cup soy sauce
1/4 cup chopped onions
2 tbsp brown sugar
2 tbsp lemon juice
1/2 tsp fresh ginger, grated or finely chopped
1 1/2 lb Salmon, skin on, cut into 4 equal pieces
Instructions:
Mix together all ingredients except the salmon. Pour over salmon in a large dish or inside a ziploc bag (our preference). Add the salmon and let marinate for about 3 hours.
Cover a baking sheet with aluminum foil. Spray with PAM if you want to flip your salmon. Place Salmon on tin foil skin side down. Turn broiler on high. Broil for 6-14 minutes, flipping half way though if desired (we usually don't, but we don't like the skin. If you do, you can crisp the skin by flipping). Cooking time will vary wildly by oven.
Serve with Challah (Connaughton method) or over white sticky rice (Megler)
