Cowboy Ciao Pesto Salad Dressing

Ingredients:
  • aioli (1/3 cup olive oil, 1/4 cup mayonnaise, 1 garlic clove, minced)
  • 1/4 cup basil pesto (see pesto recipe)
  • 1/2 shallot, roughly chopped
  • 1/2 cup buttermilk
  • 1/4 tsp coarsely ground black pepper
  • 1 tbs fresh lemon juice
  • salt and pepper, to taste
Put:
  • mayonnaise and garlic in cuisinart.  Mix, and slowly add olive oil.  Then add pesto, shallot, salt, pepper, and lemon juice.  Slowly add buttermilk and season to taste.  
Great on Cowboy Ciao salad of coucous, chopped tomatoes, chopped spinach, pepitas, asiago cheese, chicken or salmon, dried currants, and corn.  Arrange in lines on plate, and toss with dressing.
