Boneless Prime Rib Roast

Ingredients:
  • boneless prime rib
  • salt
  • pepper
Slice:
  • fat cap in orthogonal lines and then rub roast with salt and pepper on all sides at least 24 hours prior to roasting.  Return to fridge.
Heat:
  • oven to 450, with racks adjusted to bottom third of oven.  Remove roast from fridge at least 1 hour prior to cooking.  Roast meat for 30 minutes at 450.
Turn:
  • oven down to 325, roasting for about 13-15 minutes/pound of meat, for a medium roast.  The interior temperature of the meat should be about 137.
Let:
  • sit for at least 20 minutes prior to slicing and serving (time to cook the Yorkshire pudding or popovers!).
Serve:
  • as is, or with whipped horseradish.
