Peanut Butter Chocolate Drop Cookies

from Ellen's kitchen with thanks to the Benowitz family, makes about 24 cookies

Ingredients:

  • 1/2 cup butter, softened
  • 1/2 cup creamy peanut butter
  • 1/2 cup granulated sugar, plus more for rolling dough balls
  • 1/2 cup brown sugar, packed
  • 1 egg
  • 1 tsp vanilla
  • 1 3/4 cup flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • chocolate kisses 
Cream:
  • butter and peanut butter until smooth.  Add sugars and cream well.  Add egg and vanilla and combine until blended.
Measure:
  • flour, baking soda, and salt into bowl and whisk together, then add to creamed mixture until just combined.
Form:
  • dough into balls and roll in granulated sugar.  Place on parchment paper on cookie sheet, 12 to a sheet.  
Heat:
  • oven to 375 and bake for 8 minutes.  Remove from oven and press one chocolate kiss into each cookie, so that the edges of the dough crack.  Put back into oven and bake for another 2-3 minutes until golden on edges and chocolate is soft.
