Farmer's Chop Suey
Farmer's Chop Suey (serves 2)
from Ellen's kitchen, thanks to Fit for Life
Ingredients:
- 1 small iceberg or romaine lettuce, washed, dried, and torn/chopped
- 2 cups spinach
- 6 radishes, sliced
- 1 medium cucumber, sliced
- 1 large tomato, sliced
- 1-4 tbs scallions, sliced
- 1/2 cup low fat sour cream
- 1 cup low fat creamed cottage cheese
- 1 tsp dried dill
- 1/8 dried tarragon
- salt and pepper to taste
Combine:
- all vegetables in large bowl. Mix sour cream and cottage cheese in small bowl, adding dill, tarragon, salt, and pepper to taste. Pour over salad, and toss.
