Farmer's Chop Suey

Farmer's Chop Suey (serves 2)

Ingredients:
  • 1 small iceberg or romaine lettuce, washed, dried, and torn/chopped
  • 2 cups spinach
  • 6 radishes, sliced
  • 1 medium cucumber, sliced
  • 1 large tomato, sliced
  • 1-4 tbs scallions, sliced
  • 1/2 cup low fat sour cream
  • 1 cup low fat creamed cottage cheese
  • 1 tsp dried dill
  • 1/8 dried tarragon
  • salt and pepper to taste
Combine:
  • all vegetables in large bowl.  Mix sour cream and cottage cheese in small bowl, adding dill, tarragon, salt, and pepper to taste.  Pour over salad, and toss.
