Miniature Homemade Flour Tortillas (yields 24-32 small tortillas)

Ingredients:

Ingredients:
- 3 cups all purpose flour
- 1/3 cup olive oil
- 1 tsp salt
- 1 cup water
Place:
- flour in mixing bowl. Add oil and stir with a wooden spoon until mixture resembles coarse meal.
Dissolve:
- salt in water, and add water to bowl with flour. Stir with the wooden spoon until you can gather mixture into a ball. Place ball on unfloured board (if dough is sticky place a small amount of flour on your work surface) and knead until smooth and elastic, about 4-5 minutes.
Wrap:
- dough tightly in plastic wrap and allow to rest in a warm spot for 30 minutes.
With:
- a bench knife, divide the dough into 24 or 32 equal sized pieces. Roll each piece between your palms to form a ball. Flatten a ball and, using a rolling pin, roll into a circle 3-4 inches in diameter. Repeat with remaining balls, storing on parchment.
Heat:
- heavy skillet or griddle over medium heat. Place a tortilla in pan and turn in 45 seconds. Cook second side about 30 seconds. There should be a few brown spots on each side. Repeat with remaining dough.
